Let’s be real, tonkotsu ramen broth takes at least 6 to 10 hours to make, and we only have 2.5 hours to make ramen broth, gyoza, and ice cream! I am excited to share with you my home style ramen recipe that I have created that takes only two 90 minutes with chicken, kombu and so much umami in it. And, of course, suggesting other alternative ingredients to make delicious broth based on what you can find in your country. We’ll also make lots of gyoza. Chopping lots of cabbages, chives, and grating garlic and ginger. I will ask everyone to use your hands, to chop, form gyoza, and present the dishes we make. Many great tips to make super crispy juicy pan fried gyoza and of course, we will learn about cooking tools! Some Japanese cooking gadgets you have never seen. We will cook from all from the beginning within the class timeframe. My experiences are hands-on cooking followed by my short cooking demos. Of course my passion is not only sharing cooking techniques, I’d love to share with you how locals live and visit local neighborhoods where mostly you wouldn’t be visiting as tourists. Most importantly, I want my guests to experience and perceive real lives in Japan. Looking forward to having you all!

    Ramen

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

  • Gyoza

    Gyoza

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.
