    Okonomiyaki

    Okonomiyaki is a Japanese savory pancake, made with flour, eggs, shredded cabbage, meat and toppings as you like. This variability is reflected in the dish's name: "okonomi" literally means "to one's liking". You can eat it everywhere in Japan, but especially Okonomiyaki made Hiroshima style and Osaka style are the most famous.

    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

    The Japanese tea ceremony is a centuries-old tradition closely tied to Zen Buddhist principles, and a popular way to experience Japanese culture. There are several variations on this ritual. At its base, powdered green tea (matcha) is prepared and served in accordance with strict rules. Oftentimes, wagashi (Japanese sweets) is served alongside the bitter green tea.

is characterized by having a variety of ingredients--batter ,cabbage,egg,pork,noodle ,etc--piled on top of each other in tantalizing layers.
Okonomiyaki is a very nutritious and well-balanced meal .In the case of Hiroshima-style Okonomiyaki .

***Hiroshima-style Okonomiyaki ***

About 900 okonomiyaki shops can be found in Hiroshima City alone. Why so many you may ask? The first Hiroshima-style okonomiyaki was made about 100 years ago. But after the atomic bombing (WWII), many mothers found themselves widows, with no means of earning money to feed and care for their children. Food itself was scarce, rice was hard to come by, but flour from America was more easily accessible. As such, these hardy survivors renovated their homes to serve the affordable but stomach-filling okonomiyaki to hungry customers. Okonomiyaki shops were often named after the mother who owned the shop. That is why many okonomiyaki shops have the word ~chan (Micchan, Reichan, etc).
