    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

    Sake

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

We can cook the Japanese-style original teriyaki together and I can teach you the Emi’s original special Teriyaki sauce, which is very popular from foreign travelers.
Emi’s teriyaki sauce is not too sweet and super delicious !

The Harry Potter museum in Tokyo will open on 16 June in 2023. It's about 20 minutes walk from her apartment. If you plan to go there, please include her sushi class!

*Emi’s home in Nerima, she can accept only 1-3 guests:
Meeting location: Meet Emi at Nerima station and then walk for 10 mins from the station to her home. Emi will meet you at in front of the ticket machines of the station. Please note that Nerima has two stations - one station (Oedo line) has 1 exit and the other one (Seibu-Ikebukuro, Yurakucho and Fuku-toshin lines) has 2 exits. Please let Emi know in advance which line you will use, she will send the picture of the meeting point. Or please let her know where you’re staying, so that she can suggest the best route.

Our experience was a great success and I would rate it 5. Our cooking class took place in Shibuya in a street easy to access. Our menu consisted of spinach with sesame, rice, teriyaki chicken and miso soup. Although it all sound very simple there is an art to it and we both learned some useful tricks for future dishes. We had a great time chatting while preparing simple yummy food that we will definitely be able to make again at home. Our host was interesting and kind. We discussed her city as she is a Tokyo native. We shared food stories of different countries and had a great time. We thank her very much for her time and wish her all the best future guests.
