Nerikiri is called high‐grade Japanese fresh confections, it is served in tea celemony.
It's a type of Japanese confectionery where you shape and mold dough made from white beans paste and soft mochi into shapes like flowers and leaves.

    Green Tea

The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

I want to make friends all over the world! And I want many people to experience Japanese home cooking! I always think. Go to your friend 's house and eat pleasantly by making rice together! .... I'd like to have such a feeling. If you eat together, you get to know each other well, you can get along better. I am dreaming of making such encounters as people all over the world. I am very interested in international exchange since I was a child. I am hosting a host family of high school students from Switzerland, Australia and Spain, and now I am volunteering and enjoying studying Japanese for international students. Why do not you try new experiences with me who love to eat and cook? I am looking forward to it!

Fumie is a wonderful host and an excellent teacher! Cannot recommend enough. My husband and I were on our honeymoon trip and making wagashi together was such a special experience and Fumie’s preparation and instruction made it so easy to follow. She also prepared delicious matcha and strawberry daifuku for us! You don’t want to miss this experience!

This was one of my top experiences of my 6 weeks in Japan! Fumie-san is so kind and creative. She picked me up from the station and welcomed me into her home. She was incredibly kind, hospitable, and informative. The nerikiri she designed was absolutely stunning but she guided me and helped me while teaching me about Japan while having a good old chat. She taught me a variety of crafting techniques and had prepared a range of Japanese flavours and colours to explore. We had so much fun exchanging stories and made a fun koala nerikiri. The class finished with Fumie-san teaching me a Japanese tea ceremony. She so kindly provided ice packs, a cute cloth to wrap them up, and she painted a card for me too! I highly recommend this to anyone and everyone visiting Nagoya! I can't wait to return one day and explore more Japanese cooking with her.
