    Tempura

    Tempura (天ぷら) is a classical Portuguese dish brought to and popularized by Japan, consisting of seafood or vegetables that have been battered and deep fried. Tempura is a typical home-style cooking in Japan. It is often referred to as a representative dish to Japan. Although there are various theories, it is said that Tokugawa Ieyasu, the general of the Edo period, liked tempura so much that he allegedly died from eating too much.

  • Udon

    Udon

    Udon (うどん) is a type of thick wheat flour noodle. It is similar to Italian pasta, but much thicker. It has been eaten all over Japan as an easy-to-eat popular meal, and a substitute meal for rice dishes. Udon is often served hot as a noodle soup in its simplest form, as "kake udon", in a mildly flavoured broth called kakejiru, which is made of dashi, soy sauce, and mirin. The flavor of broth and topping vary from region to region.

●Meeting place
We will meet at Tanbaguchi station (丹波口駅), which is two stops from Kyoto station by San-in Honsen (山陰本線). From there, it's a short, 3 minute walk to my kitchen studio.

●About the class
Because the dough is so hard, we will use our feet to knead the dough. This is the traditional Japanese way of making it. Don’t worry, though it might seem strange, it’s all going to be very hygienic! The dough will be covered in plastic bags as we knead it with our feet. We will also make dashi (stock) to make the soup. And as a final step we will make tempura. You will learn how to prepare the ingredients for tempura and how to fry it.

●Please note:
・We will use a dashi (stock) sachet which is easy to use for udon soup. Also, we will use tempura flour for tempura batter. Both dashi sachets and tempura flour are commonly used ingredients in a typical Japanese home. You will learn how to use these items.
・Because this class requires the use of a knife, I ask that kids be at least age 10, and are able to use a knife.
・Only people who are participating in the class may attend. No spectators, please.
・If you have any specific dietary restrictions, kindly inform me before you book. I may/may not be able to accommodate your needs.
・I may choose to cancel bookings that are only for one person.
