    Ramen

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

    Gyoza

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

    Sake

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Love Japanese ramen?

It is very difficult to make very tasty ramen like the ones from ramen shops. They spend several hours to days simmering their secret ingredients to make their special original soup.
That was the reason why I did not add ramen to my menu for a long time.
However, as ramen is very popular and we’ve received many requests from our guests for a ramen & gyoza class, finally we set this class!!

Actually, I remember my mom sometimes cooked chashu (braised pork) and using chicken broth and the sauce from the chashu, she made ramen for us. It was homestyle simple ramen but still tasted quite good.

I brushed up the classic soy sauce-based ramen recipe and made it taste more professional but easy enough to make in one hour.
In this class, you will learn how to make ;

– Ramen soup (chicken & soy sauce-based) from scratch.
*We are not making the noodles and will use store-bought noodles.
– Chashu (braised pork)
– Soft boiled seasoned ramen eggs
– Fried pork gyoza (dumplings)

Hi! I'm Junko! With my good foodie friend, Eiko, we offer authentic Japanese home cooking classes with a laid back feeling as if you are preparing a home party.
Most of our recipes require no special ingredients nor unusual equipment. I try my best to provide recipes that use ingredients that can be found at ordinary supermarkets overseas.
The menus in the classes reflect authentic Japanese home cooking, which I learned from my mother and my grandmother. We eat a lot of healthy meals using a variety of seasonal ingredients in Japan. I love to share the healthy dishes I cook daily. There are so many Japanese dishes and cultures that are not well known outside of Japan and I’m happy to introduce them to you!
The happy smiles of our guests are the biggest treat for us. We will welcome you to our kitchen with all our hearts :)
