Hitsumi Hitsumi is one of the local dishes of Iwate Prefecture. In a soy sauce-flavored soup containing radish, burdock, carrots, onions, and chicken, a dough made by kneading wheat and water is "hitsumi" (= to tear off) and cooked.
In this cooking class, we make Hitsumi together. Have them cut the vegetables and knead the flour. The taste of vegetables and chicken is very delicious. The stuffy texture of Hitsumi is also irresistible.
