What I teach during the class are:

1)how to make sushi vinegar and sushi rice
2)how to make hosomaki (small roll)
3)how to make nigirizushi (ingredients on top of rice)

At the end of the course, we all sit and eat them together with miso soup and sparkling sake. Non alcohol drink is also available. We can have great time together and get connected with other travelers!!

One of the main purposes of this class is to make you to be able to make nice sushi at home for your family and friends! Making sushi is very fun activity and I believe that sushi makes you people happy! I want you to make people around you happy by making delicious sushi by your self!!

    Rice

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

  • Sake

    Sake

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

Cooking Class Information

Vegetarian menu can be available. Only one person in a group is vegetarian? No problem! Please just consult with me when you book!

Vegan menu can be also available and please understand some other participants may use seafood.

Please let me know in advance if anyone have food allergies.

All the tools you need such as a bamboo mat, a paddle, a bowl, hand groves are provided by me.

During the workshop, I'll also explain about other ingredients for sushi such as seaweed, rice, seafood, vegetables and others.

Some processes require fine motor skills so I take any children older than 10 years old. Of course I welcome to join with your little children. Please consult with me if you have small children in your group.

1)Sushi rice

If you want to make sushi at home, you need to know how to make sushi rice because this is a fundamental process to make tasty sushi! I lecture how to make sushi vinegar with an appropriate ratio with salt and sugar. Then, you make your own sushi rice for the lesson.


2)Hosomaki

We'll make 2 hosomakis, one with cucumber and another with avocado. Please note that the ingredients are subject to change without any notice.

I teach step by step and will pay attention to each guest to make sure everyone is doing correct.

After finishing all the sushis, I'll teach how to cut the rolls properly.


3)Nigirizushi

I prepare 3 seafoods, usually Tuna Salmon and some white fish. It depends on the availability at the markets/shops. Please understand that I will not take any special requests for the seafood except food allergy.

I'll show you how to slice fish for nigiri and this is very technical part and I have to do this for the guests.
Then, make 2 pieces of nigiri with one seafood so total 6 pieces will be made. I'll go with guests every step so you don't have to worry about anything.


4)Arranging
After making hosomakis and nigiris, you cut the rolls with my instruction. Then, arrange your creation on special plates I provide so that you can take nice pictures for your Instagram and Facebook!!


5)Having a party!
I'll serve miso soup and sparkling sake along with the meal. We can exchange some information about Japan and your country and make connections with other travelers!

I used to live in San Francisco for 12 years as a preschool teacher. That's when I found sushi is fascinating cuisine to enjoy! I went to sushi school when I came back and started to be a sushi instructor.
