Sumashi soup is a basic Japanese soup made with dashi stock made from bonito flakes and kelp. I make it using a recipe I learned in nutrition school. The first stock will be used for the soup stock, and the second stock will be used for the takoyaki. Let's make dashi soup together, which is the basis of Japanese home cooking.

In this lesson, we will make takoyaki and sumashi soup.
First, make the dashi soup . Japanese dashi is made by boiling water in which kelp has been soaked, then adding bonito flakes to the water to extract the flavor. The first dashi stock will be used for soup stock, and the second dashi stock will be used to make takoyaki dough. For the soup stock, add salt and soy sauce to the dashi stock to adjust the taste.
To make takoyaki, first make the dough. Make the dough using flour, eggs, and the second soup stock you made. Pour the prepared oil onto a griddle, add chopped cabbage and octopus, and grill. Have them learn how to make round shapes skillfully.
Please note that due to Japan's hot and humid climate, we do not allow you to take home the food you have prepared.
