It is the most common soup in Japan. Miso, a fermented food, is great for your health. Let's make miso soup with lots of ingredients such as seasonal vegetables and tofu.

・Dried food dishes
Japan has a variety of dried foods. For example, dried daikon radish and Koya tofu are representative. These are full of flavor and have very high nutritional value. It is used in boiled dishes.

・Dried fish
It is made by drying fish in the sun. In Japanese, it is called "himono". When eaten as grilled fish, it is full of aroma and flavor.

Also, make some side dishes using seasonal ingredients.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

In this cooking class, we can cook Japanese home cooking.
First, let's make miso soup.After making the stock, boil the seasonal ingredients, and then, they become soft, add the miso and dissolve.(Reheat miso soup just before eating.)

In the meantime, roast the dried fish.

I believe that by eating foods that reflect the four seasons, you can adjust the rhythm of your mind and body.

I am also a certified soup sommelier.
Utilizing that knowledge, I serve Japanese soups that bring out the full flavor without using artificial ingredients as much as possible.
