・"Inari-zushi" (Sushi Poket); a vinegared rice ball wrapped in a sweet and salty deep-fried tofu pocket. the most common is to wrap the whole rice neatly, but we will also make something a little more colorful and pretty by decorating with some toppings.

"Inari-zushi" and "Maki-zushi" can be made with affordable ingredients. This home-made sushi is loved by many Japanese people and is popular as a lunch box item for special occasions such as school trips, sports days, and picnics. Of course my family love it!

In this class, we will make Inari-zushi, Sushi Roll, miso soup according to the following procedures. If time permits, I would like to make side dishes such as GOMA-AE (vegetables with sesame dressing) as well.
1) Making White Rice
Cook white rice in a pot. We do not use an electric rice cooker.
2) Making Dashi Stock
Simmer Kombu(kelp) and/or dried bonito to make miso soup.
3) Making Pocket of Fried Tofu
Cut and open the fried tofu and then simmer them with sugar and soy sauce in a pot.
4) Making Toppings and Vinegared Rice
Make Kinshi-tamago(thinly shredded sweetened omelets) and cut and boil vegetables. Mix cooked rice with vinegar dressing.
5) Wrapping and Rolling
Wrap vinegared rice with pockets of fried tofu to make Inari-zushi. Roll up vinegared rice with toppings by using a bamboo mat (called makisu) to make Sushi Roll
6) Let’s Eat!

・We do not use row fish or meat in my class, however I usually cook meat or fish in my kitchen. I always use separate cutting boards and knives for them.
・Please let me know if you are vegetarian or vegan, as we do not use eggs.
