Cooking Class Menu

traditional daily meal patterns called "Ichiju-sansai" which is composed of below
・White rice
・Miso soup
・2 side dishes (using vegetables)
・1 main dish (using eggs or tofu)

●Example of side dishes
・KIMPIRA; stir-frying vegetables, such as burdock, carrot and lotus root, and boiling down in sugar, soy sauce and others
・Simmered Pumpkin
・SHIRA-AE; Mashed tofu and vegetables, such as spinach and carrot, seasoned with miso or soy sauce and sugar
・GOMA-AE; vegetables with sesame dressing

●Example of main dishes
・TAMAGOYAKI; Rolled Omelet
・AGEDASHI-DOFU; deep-fried tofu with a soy-based sauce

These are traditional Japanese home cooking, and of course the most common items on my family's table.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

In this class, we will make white rice, miso soup, and 3 dishes(1 main dish and 2 side dishes) according to the following procedures.

1) Making White Rice
Cook white rice in a pot. We do not use an electric rice cooker.
2) Making Dashi Stock
Simmer Kombu (kelp) and/or dried bonito to make miso soup.
3) Making Side Dishes
Make 2 side dishes using seasonal vegetables.
4) Making Main Dish
Make a main dish using eggs or tofu.
5) Let’s Eat!

NOTICE
・Please let me know IN ADVANCE if you have any dishes above (or other than above )you'd like to try, for I need to prepare the ingredients. If there are no requests, I will make a choice.
・We do not use row fish or meat in my class, however I usually cook meat or fish in my kitchen. I always use separate cutting boards and knives for them.
・Please let me know if you are vegetarian or vegan, as we do not use eggs.

My name is Miho. I am a full-time homemaker who loves cooking and eating. I live in an apartment near Fujisawa station with my husband and 4-year-old son.

I used to enjoy eating out before my child was born. I wanted my son to enjoy same meals as we do. So, I’ve made almost all meals in my kitchen. I modified seasonings and texture of same dishes as my child grew up, and I started trying out complicated dishes I had never made before. My son has also enjoyed cooking with me since he was 1 year old. Though it takes a little time and effort, it makes me happy that my family loves my cooking.
