I trained in making ramen at Shio Soba Maeda in Mihara City, and was taught the secrets to making delicious ramen, including ``Shio Soba'', which uses Seto Inland Sea salt and sardines as a soup stock.
We hope you will be able to experience the excitement of Shio Soba Maeda at the Setouchi Gourmet Club.

The flavor is extracted from Setouchi sardines, Hokkaido true kelp, Kagoshima bonito flakes, domestic dried shiitake mushrooms, Hokkaido dried scallops, etc.
By combining sea salt from the Seto Inland Sea with sardines (from the Seto Inland Sea), dried scallops (from Hokkaido), apple cider vinegar, and rice malt, you can enjoy the original taste of the ingredients.

Homemade noodles made from 100% Hokkaido wheat that go well with the soup. The straight thin noodles made with stone-ground whole grain flour have a firm texture. Please experience the deliciousness of wheat.

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

Cooking Class Information

Learn about the three important elements of ramen soup: dashi stock, kaeshi, and flavored oils, sample the flavors of each, see how they change when layered together as ramen soup, and how they differ when eaten as ramen with noodles added.
You can feel it and experience the important essence of ramen.
If you wish, you can experience the whole process of making ramen soup, boiling the noodles, and plating them.
*We will prepare soup stock, seasonings, flavored oil, noodles, ingredients, etc. for the number of participants.

We will gather at the Setouchi Gourmet Club, located at 2581-16 Momoshima-cho, Onomichi City, Hiroshima Prefecture. *Since you are coming to a remote island of Hiroshima, we recommend staying on the remote island. Please use the rental villas at "Setouchi Hideaway Resort".

You will experience cooking by boiling noodles to the optimum hardness while warming the soup stock.

A secret salt sauce and a flavored oil with the scent of burnt garlic are added to the bowl. *Sorry, but the secret recipe cannot be shared!!
