Miso ramen & Gyoza (No MSG)
Miso ramen is a popular noodle dish with meat broth and different kinds of miso originally from Hokkaido. Now there are different types of miso ramen throughout Japan.
Gyoza is a Japanese dumpling made by wrapping meat, cabbage, leek, etc. in a skin made of thin flour. Homemade wrappers are the best!
In this class, we make the miso ramen broth using miso, pork ( or chicken) garlic, ginger, sugar, chili bean paste & other secret ingredients.
Then boil noodle, bean sprouts, eggs. Also cut spring onion and corn for the toppings.
Also we make Gyoza to have with miso ramen as a typical Japanese meal.
You can buy the gyoza wrappers of course, but once you try my homemade wrappers you can’t go back to the store bought ones!
After cooking, let’s have meal together with some drinks and share the good times in the cozy dining space with some Japanese beer/sake (or non-alcoholic drinks)*You can choose your sake cup from great selection of more than 20 kinds.
*All drinks such as beer, Sake and soft drinks are included in the fee.
In my classes, I will explain each steps, and give you an English recipe at the end so you can make them for your family and friends.
1. I will meet you outside of the exit ( There is only 1 exit) at JR Sobu line Shimosa Nakayama station.
It is a nice walk on a Japanese old street.
Then we walk on the old cobblestone towards the pagoda then to the main hall which is a national treasure.
I will take pictures while walking in this temple.
You can choosing your apron from my collection of aprons. Then I will hand out the recipe.
My name is Kyoko.
I live in the suburb of Tokyo (25 minutes from Tokyo station and also from Akihabara ) It is a very nice area with big temple and big trees. I will meet you at the station and give you a short tour of my town through the nice old temple and old streets (*10 minutes walk)
I love cooking/eating all different kinds of food.
Also I enjoy inviting people to my place from all over the world to have meals together.
I lived in British Colombia, Canada for 4 years and while I was there, I started Japanese catering in the Rocky Mountains.
I was in the food and hospitality industry all my life (Canada and Japan ) and I love meeting new friends and share Japanese culture through cooking.

★★★★★Cooking with Kyoko was one of the highlights of our trip! My girls love miso ramen and I thought it would be great if we could learn how to make it at home. I chose Kyoko over others because I wanted a smaller and more relaxed experience. We met Kyoko at the train station and she walked us through a temple on the way to her house. The temple is full of cherry blossom trees and if you go when they are blooming, that will be an added bonus. Kyoko welcomed us into her house, we chose our aprons, washed our hands, and got started. Kyoko led us through each step of the recipe. Since there were 4 of us, we doubled the recipes. Shaping the gyoza into circles were challenging but they didn’t have to be perfect at all! My girls, husband, and I had varying shapes of oblong circles, rectangles, and hearts. It was so much fun and we laughed a lot. We went on to the ramen recipe while Kyoko steamed and fried the gyozas. While the ramen broth was cooking, Kyoko had us sit and eat our gyozas. They were delicious! Our ramen was also delicious and we all felt we could make the dishes at home. Learning how to cook with Kyoko was really like visiting an old friend with excellent cooking skills! She is so friendly, sweet, and kind. She also has interesting stories about living in the US and Canada so be sure to ask. I don’t know when we’ll be back in Japan but we’ll be sure to reserve another lesson with her if she has time for us! Thank you so much from the bottom of our hearts!
