◦Onigiri 
Onigiri is typical Japanese food made from steamed rice with filling inside. It is usually formed into triangle or
cylinder shapes and wrapped in nori or a dried seaweed sheet. We traditionally use fillings such as
umeboshi or pickled plum, dried bonito flakes with soy sauce, cod roe etc, but you can put anything like
tuna&mayo or even tempura inside! Onigiri is a perfect on-the-go food and has been loved for centuries in
Japan.

◦Miso soup
Miso soup or miso-shiru is made from dashi stock and miso or fermented soybean paste. Popular ingredients
are tofu, wakame or seaweed, green onions etc. Seasonable vegetables or local ingredients are often
added as well. There are also rich varieties of miso paste you can choose from. You can try hundreds or
thousands of combinations of miso and ingredients you like, once you learn the basic recipe.

◦Dashimaki-tamago
  Dashimaki-tamago is Japanese style rolled omelet flavored with dashi stock and is popular as part of a
traditional breakfast or a side dish for a lunch box. The rich dashi stock makes the omelet juicy and fluffy. It
also creates a gentle and moist texture. You can learn basic and essential tips to make a beautifully shaped
omelet by using a unique rectangular frying pan specialized for dashimaki-tamago.

◦Chikuzen-ni
  Chikuzen-ni is a Japanese style stew of chicken and vegetables, such as carrots, lotus root, burdock(root
vegetable), shitake mushrooms, braised in broth. It’s usually flavored with soy sauce and mirin or sweet
cooking rice wine. It is one of the traditional local foods in Fukuoka (used to be called Chikuzen) and is
widely made not only as a typical homemade dish but also a special treat for New Year’s celebration in the
area.

    Tempura (天ぷら) is a classical Portuguese dish brought to and popularized by Japan, consisting of seafood or vegetables that have been battered and deep fried. Tempura is a typical home-style cooking in Japan. It is often referred to as a representative dish to Japan. Although there are various theories, it is said that Tokugawa Ieyasu, the general of the Edo period, liked tempura so much that he allegedly died from eating too much.

Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

In the class, you will learn how to :
1. Use Japanese style kitchen tools
2. Cook rice with a pot.
3. Make dashi(broth) for miso soup and dashimaki-tamago.
4. Make miso soup and omelet with the broth.
5. Cut the ingredients and cook Chikuzen-ni
6. Make onigiri with fillings (shape cooked rice into triangles)
After cooking, try the dishes you made and feel free to ask any questions.
