Traditional Japanese broth made with dried bonito and kelp.

"Miso soup"
Cook with the dashi you made. You can put any ingredients in it. Find your favourite.

Mashed tofu salad "shira-ae"
This is a vegetable side dish made with mashed tofu and sesami.

I'll offer upper three dishes and one out of below.

Egg roll "Dashimaki"
This egg roll is added a lot of dashi, so it's difficult to roll and challenging.

Japanese fried chicken
Fried chicken seasoned with soy sauce and ginger, or you can chose fish instead of chicken.

Pork egg roll "Tonpeiyaki"
This is originally from Osaka. Pork is rolled in egg and eat with okonomiyaki sauce.

Beef and potato pot "Nikujaga"
With great quality wagyu, let's try one of the most popular Japanese cooking.

Simmered fish "Nitsuke"
Fresh seasonal fish simmered with soy sauce and sugar. In Kansai area, we prefer sweet taste in it. It pairs well with white rice.

  • Okonomiyaki

    Okonomiyaki

    Okonomiyaki is a Japanese savory pancake, made with flour, eggs, shredded cabbage, meat and toppings as you like. This variability is reflected in the dish's name: "okonomi" literally means "to one's liking". You can eat it everywhere in Japan, but especially Okonomiyaki made Hiroshima style and Osaka style are the most famous.

  • Nikujaga

    Nikujaga

    Nikujaga literally means “meat and potatoes”, from two of the main ingredients niku (meat) and jagaimo (potatoes). It’s a comfort food for the Japanese and it is a very popular meal cooked at home. It is often considered “mother’s cooking” (“ofukuro no aji” おふくろの味 in Japanese) as each household cooks it just slightly different. The food itself is very simple and homely, and the warm bowl of your mother’s nikujaga brings one back to their roots. It is probably the most popular dish among all kinds of nimono (煮物 Japanese stewed dishes).

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Cooking Class Information

I'll pick up you at Osaka-Uehonmachi station by walk or car.
It takes under10 min walk.

In the cooking class, we cook dashi together, and miso soup using the dashi.
You can try to make egg roll, Nitsuke,
Tonpeiyaki, or Nikujaga.
After all cooking done, we'll enjoy the lunch together with fun conversation!
If you want to drink alcohol, you can bring what you like.
I'll drive you to the station of Osaka-Uehonmachi or Tsuruhashi (both are less than 10 minutes from my house) if you want.
