Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

I run a restaurant and cooking class in Tsurui Village, a village where red-crowned cranes live, about 40 minutes by car from Kushiro. I have a 360-degree view from my house on a hill. I have been running cooking classes using local ingredients for 25 years. I want people from outside of Japan enjoy Japanese ingredients, Japanese culture, and food.with good times.
