This is a lesson in making authentic Japanese food in just 3 hours. This Shokado bento is filled with seasonal takikomi-gohan (rice seasoned and cooked with various ingredients) and a variety of world-favorite side dishes such as tempura and teriyaki chicken. Dessert is shiratama anmitsu (dumplings). Why not try making this traditional Japanese dish yourself?
*Seasoned Rice
Rice cooked with seasonal ingredients is often prepared in Japanese households. The type of dashi varies according to the ingredients. Kombu dashi, bonito dashi, iriko dashi, and dried shiitake mushrooms are the basic ingredients. Rice cooked in an earthenware pot is exceptionally delicious.
*Teriyaki chicken
Teriyaki chicken seasoned with salted malt (Koji). Koji is a type of fungus unique to Japan and used in fermented foods such as miso and sake. Koji breaks down proteins, resulting in tender and delicious teriyaki chicken.
*Tempura
Tempura is very popular all over the world. Shrimps, chikuwa (fish-paste cake), potatoes, vegetables, etc. are also popular among Japanese. Seasonal vegetables are delicious enough with just salt. You can also make Miso Dengaku with deep-fried eggplant. Enjoy the change in flavor.
In this class, you will learn the spirit of Japanese hospitality while preparing traditional seasonal Japanese dishes. The colorful side dishes, packed in a large black lacquered bento box, are called “Shokado bento” and are usually eaten on special occasions such as cherry blossom viewing and theater performances.
We invite you to experience the Japanese culture of preparing special dishes that reflect the importance of each of the four seasons.
The dishes are nutritionally balanced with a staple (rice), main dish (meat, fish, eggs, soy products, etc.), side dish (vegetables), and dessert.
Although these are authentic Japanese dishes prepared in a Japanese home, even beginner cooks can participate because the hosts, who are registered dietitians, will prepare the dishes together with the participants.
The carefully prepared dishes will be served in the comfort of a traditional Japanese room. Please let us know about your favorite dishes from your country!
I am a Registered Dietitian who loves to cook and eat. In 2017, I attended a cooking class for foreigners in Singapore and had a great time. I wanted to offer that experience to foreigners visiting Japan. I hope that foreigners visiting the Kansai region will also visit Ikoma City, which is next to Nara City, and cook Nara's local cuisine with me to make their trip a fun and memorable one.
