•NIKU-JYAGA / Braised Meat and Potatoes
Niku-jyaga is a dish of beef (or pork) and potatoes braised in sweetened soy sauce.
A classic menu item in Japanese home cooking.

•DASHI-MAKI TAMAGO / Rolled Omelets
This is a rolled omelet flavored with dashi stock. We use a square frying pan specifically for making rolled omelets. Let's make it together!

•Rice and Miso Soup
The miso used is handmade by the family every year, and the ingredients include tofu and seaweed.
We cook rice in a clay pot. In my house, we eat a mix of white and brown rice.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Cooking Class Information

In my cooking class, we make niku-jyaga and omelettes. These are standard Japanese home-style dishes.
Miku-jyaga is a time-consuming stew, but by using a pressure cooker, it can be made in a short time.
Dashimaki Tamago is made by repeatedly rolling an egg with soup stock in a special square frying pan to make a single rolled omelette.Let's make omelets together!
