■Karaage – Japanese-Style Fried Chicken
Let’s make karaage, one of Japan’s most beloved comfort foods!
This crispy fried chicken is marinated in soy sauce, ginger, and garlic, then deep-fried to golden perfection. It’s a popular dish at izakayas (Japanese pubs), lunch boxes, and home kitchens. Crunchy on the outside, juicy on the inside – you’ll see why this is a favorite across Japan!

■WAGYU Steak – Japan’s Finest Beef
Experience the melt-in-your-mouth tenderness of authentic WAGYU, Japan’s world-renowned premium beef.
With its exquisite marbling and rich flavor, WAGYU steak is a true culinary luxury. In this class, we prepare it simply to highlight its natural taste – just a touch of salt, pepper, and expert grilling. Savor every bite of this unforgettable Japanese delicacy, crafted with care and tradition.

■Dashimaki Tamago – Fluffy Japanese Omelet with Dashi
Learn to make dashimaki tamago, a soft and juicy rolled omelet infused with Japanese soup stock (dashi).
This seemingly simple dish requires finesse – layering and rolling the egg while keeping it moist and tender. It’s a favorite in traditional breakfasts, lunch boxes, and home-cooked meals. Discover the subtle elegance of Japanese home cooking through this comforting classic.

■Nikujaga – Japanese Home-Style Simmered Meat and Potatoes
Nikujaga is one of Japan’s most beloved comfort foods.
This heartwarming dish features thinly sliced beef, potatoes, onions, and carrots simmered in a sweet-savory broth made with soy sauce, mirin, and sugar. Often called the “taste of home” in Japan, nikujaga is simple yet rich in flavor, with tender vegetables soaking up the delicious broth. A perfect introduction to traditional Japanese home cooking.

■Osuimono – Clear Dashi Soup with Temari-Fu and Mitsuba
Enjoy the elegance of osuimono, a delicate clear soup that showcases the essence of Japanese cuisine.
Made with fragrant ichiban-dashi (first-brew kombu and bonito broth), this dish is garnished with colorful temari-fu (decorative wheat gluten balls) and fresh mitsuba (Japanese wild parsley). Light, refined, and beautifully simple – this soup reflects the Japanese art of harmony, seasonality, and minimalism in cooking.

■Japanese Dessert – Shiratama Dumplings with Red Bean, Ice Cream & Matcha
A gentle and refined dessert that highlights the harmony of classic Japanese ingredients.
Soft and chewy shiratama dumplings are served with sweet anko (red bean paste) and creamy ice cream, finished with a light sprinkle of matcha powder. The balance of textures and subtle flavors creates a comforting and elegant finale to your meal.

■Steamed White Rice
Enjoy perfectly steamed white rice, the staple of Japanese cuisine.
Carefully washed and cooked with the ideal water-to-rice ratio and heat, the rice is fluffy with distinct, tender grains. It pairs wonderfully with dishes like karaage (fried chicken) and nikujaga (simmered meat and potatoes). This simple yet essential bowl is the heart of every Japanese meal.

  • Karaage

    Karaage

Japanese fried chicken, karaage is made by marinating bite-size pieces of chicken in sake, soy sauce, ginger and garlic before coating them generously with potato starch. When fried, the starch turns into an ultra crispy shell encasing a flavorful juicy bite of chicken. Absolutely great with beer.

  • Nikujaga

    Nikujaga

Nikujaga literally means “meat and potatoes”, from two of the main ingredients niku (meat) and jagaimo (potatoes). It’s a comfort food for the Japanese and it is a very popular meal cooked at home. It is often considered “mother’s cooking” (“ofukuro no aji” おふくろの味 in Japanese) as each household cooks it just slightly different. The food itself is very simple and homely, and the warm bowl of your mother’s nikujaga brings one back to their roots. It is probably the most popular dish among all kinds of nimono (煮物 Japanese stewed dishes).

  • Rice

    Rice

Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

We had a very enjoyable time learning how to cook various Japanese dishes in Rie's kitchen. And at the end, we got to enjoy a "gochisou" together. Spot on translations by Anna and I got to ask plenty of questions which the team was very knowledgeable in answering. Very enjoyable few hours.

Hi Elliot、 Thank you for your comment. I apologize for the late reply. Thank you for coming to my home. Elliot, you have a wealth of food knowledge and are a great cook, I was a bit worried about whether you enjoyed it. I would be very happy if you could remember the recipe and make it at home. I would also love to hear about your mother’s cooking. I’m looking forward to meeting you again. Thank you very much.

It was a wonderful experience. We learned a good set of recipes, that can be done at home. Rie is a really nice person and a awesome cook. The session had the perfect mixture of learning by watching and learning by doing. We not only learned how to prepare Japanese food but also how to set the table and arrange the dishes in a decorative Japanese style. It was a complete cultural experience, just as we had hoped. We particularly enjoyed that, at the end, everyone sat together at the table, allowing for relaxed conversations. Communication throughout the course went especially smoothly because Anna translated very well into English. The course is highly recommended for everyone, as Japanese cuisine is much more than just sushi and ramen. We look forward to returning and learning something new on our next visit. Thank you, Rie, and see you next time. :-)
