Nagoya is famous for its fermented foods, especially miso.
Nagoya's home cooking uses a type of miso called aka-miso (red miso). It is called aka-miso because it has a slightly stronger flavor than regular miso and is reddish in color.
It is very rich and delicious!
★Basic Dashi stock
Dashi is the basis of Japanese cuisine.
The taste of Japanese food is determined by whether or not this dashi can be made deliciously.
We will make authentic dashi together using kombu (kelp) and dried bonito flakes.
★Miso-soup
Once you have made a good dashi broth, use it to make miso soup.
Miso soup is a typical Japanese garden dish that can be eaten in every home.
Here, too, we use Nagoya's famous red miso.
★Japanese Rolled Omelet
Omelette is also a very famous dish in Japan.
It is made in a special square frying pan.
It is a little difficult to roll them nicely, but let's try it with the instructor!
★Spinach salad with sesame sauce
A side dish of spinach dressed with sesame seeds and seasonings.
Dashi (Japanese soup stock) is also used here, and mirin, a unique Japanese seasoning, is used to give it a slightly sweet flavor.
★Onigiri Rice balls
We will make onigiri (rice balls), a favorite of both children and the elderly.
Onigiri can be made with a variety of ingredients such as salmon flakes, kelp, tuna, etc.
We will also teach you how to make beautiful triangles!
