Handmade Ramen
All noodles, soup, and chashu pork are handmade.
Noodles are made from flour. The dough is stretched and cut with a knife.
Try hand-kneaded noodles.
The soup is made in a pork bone style broth. It is made with a mixture of different seasonings and can be easily reproduced in your own home after you return home.
Chashu pork is made from chunks of pork.
Toppings are boiled egg, nori (seaweed), boiled spinach, and green onion. Rayu (raayu) and pepper are prepared to your liking.

・Gyoza
For gyoza, mix the pork with finely chopped cabbage and Chinese chives. Season with oyster sauce and soy sauce. Wrap the meat in gyoza skin. We will also teach you the tricks of how to wrap it. You will surely be able to make it at home. Each person will make about 10 pieces. Cook in a frying pan. We will teach you the tricks to cook it crispy. Fill your heart and stomach with delicious gyoza and ramen.

    Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

    Gyoza

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

Cooking Class Information

In this cooking class, we will make ramen and gyoza together. For ramen, we will make the noodles, soup, and char siu pork all by hand. For the noodles, we will mix flour, water, and other ingredients, knead them, and make the dough. We don't have any machines, so we will cut the noodles with a cutting board and knife. We will also teach you how to season the soup and char siu pork.
For the gyoza, we will mix pork and vegetables and wrap them in gyoza skins. Let's try making fried gyoza. We will fry them in a frying pan. They will be crispy on the outside and juicy on the inside. We will also teach you the tips. You can make everything with kitchen tools you have at home, so you will definitely be able to recreate the recipe after you return home. We will also give you the recipe. Let's have fun making Japanese ramen and gyoza together!

My house is 15 minutes from Yokohama station by Sotetsu line. Please change at Futamatagawa Station to the train bound for Shonandai Station. It is one stop from Futamatagawa station.

The cooking class starts at 11:00 in the morning and lasts until about 13:30.
We will eat the food we cook together at my house.

I can teach you Japanese home cooking such as Yakitori, Gyoza,sushi rolls, ramen.

I would love to share this experience with you.
