    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

At its base, powdered green tea (matcha) is prepared and served in accordance with strict rules. Oftentimes, wagashi (Japanese sweets) is served alongside the bitter green tea.

Craft Fruit Daifuku: Wrap fresh seasonal fruit in soft, chewy homemade mochi.

Make Sakura Mochi: Create a beautiful, pink rice cake filled with sweet paste and wrapped in an edible pickled cherry blossom leaf.

Prepare Warabimochi: Make cool, refreshing jelly treats with a unique melt-in-your-mouth texture, dusted with nutty Kinako powder.

Casual Tea Ceremony: Whisk your own bowl of premium Matcha with a traditional bamboo whisk to perfectly pair with your handmade treats!

Hi, I’m Maya! Born in Canada and raised in Osaka, I grew up surrounded by amazing food thanks to my grandmother, who owned a Shabu-Shabu restaurant.

I believe cooking with locals is the best way to experience a culture. As a former Airbnb host, I love welcoming travelers to my home for a fun, authentic cooking class. (Sometimes my mother or sister helps out, too!)

Maya was great! Upon arrival at her train station, she ended up meeting us at a different Family Mart from the one she requested, which was actually a lot further away, because we couldn't find it, and this caused a 30 minute start time delay. I felt so bad but she didn't complain at all. She walked my 12 year old son and I to her apartment where her mom was waiting for us. Maya and her mom were both very pleasant and patient. Instructions were clear and easy and the results were delicious. We had leftovers to take with us! Yum! They took pictures and a video which they shared with me, and Maya was also nice enough to email me the ingredients in Japanese in case we wanted to buy any here to bring back home to make! Thanks so much Maya and mom!
