    Green Tea

The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Cooking Class Information

In this class, participants will experience the traditional hand-picking of Japanese tea in the Okuyamato region of Nara.
First, tea farmer Tsuguto will explain about Japanese tea in the actual tea field, then we will harvest tea by hand in bamboo baskets.
Afterwards, we will move to a tea room in an old private house to cook freshly picked tea into green tea and hojicha (roasted green tea), which will be tasted.
At the end of the tour, participants will be able to take home the finished tea as a souvenir.
