Kaiseki cuisine, which is served before a tea ceremony, is the most Japanese cuisine and is essential for learning about Japanese culture. It is a simply seasoned dish that incorporates seasonal ingredients, so I try to make dishes that focus on the ingredients and seasonings.
There is a trick to making tea, so I can tell you how to serve each sip with care.
