Nerikiri, a traditional type of Japanese wagashi (confectionery) that is not only delicious but also incredibly beautiful. Nerikiri is made from white bean paste and glutinous rice flour, and it is often shaped into seasonal flowers, leaves, or nature-inspired designs using special tools and hand techniques.

These sweets are commonly served during tea ceremonies and are cherished for their artistic appearance and subtle sweetness. During the class, I will guide you step by step—no prior experience is necessary. You will be able to create your own edible art pieces and take them home with you. It’s a calming and creative experience that offers a deeper understanding of Japanese aesthetics and culture.

Cooking Class Information

We will use traditional Japanese wagashi tools to shape the nerikiri sweets. Inside the nerikiri dough, we place a small ball of smooth red bean paste (koshian). You will be able to choose your favorite three designs from a variety of sample shapes—such as flowers, leaves, or seasonal motifs—and we will make them together step by step.

Once you become familiar with the techniques, you’ll create your final nerikiri freely in any shape you like—whether it’s a flower, an original design, or even your favorite character. It’s a hands-on, creative experience that allows you to explore Japanese culture through artful sweets.

After making Nerikiri, we will make matcha together.

Make traditional sweets

2. Make traditional sweets " Nerikiri

First, I will explain the basics of nerikiri making. You will learn how to prepare the nerikiri dough and how to wrap sweet red bean paste inside. Then, you can choose three designs you’d like to make from various samples. We will make these three together step by step. For the final piece, you’ll create your own original design freely—anything you like!

After making the sweets, we will have a table-style tea ceremony experience. You can choose your favorite matcha bowl, and we will make matcha together.
