It’s a staple of home cooking in Japan, often served as part of a traditional family meal.

・Miso soup
Miso soup is Japan’s go-to comfort soup! Made with miso paste and dashi broth, it’s light, flavorful, and full of umami. With ingredients like tofu and seaweed, it’s the perfect side dish to a bowl of rice.

・Sasami Ume Shiso Maki
"Sasami Ume Shiso Maki" is a Japanese dish made by rolling chicken tenderloin (sasami) with pickled plum paste (umeboshi) and shiso leaves (Japanese perilla). It’s then usually pan-fried or grilled. The combination of the tender chicken, tangy plum, and refreshing shiso creates a light and flavorful dish that’s both healthy and delicious.

    Nikujaga

    Nikujaga literally means “meat and potatoes”, from two of the main ingredients niku (meat) and jagaimo (potatoes). It’s a comfort food for the Japanese and it is a very popular meal cooked at home. It is often considered “mother’s cooking” (“ofukuro no aji” おふくろの味 in Japanese) as each household cooks it just slightly different. The food itself is very simple and homely, and the warm bowl of your mother’s nikujaga brings one back to their roots. It is probably the most popular dish among all kinds of nimono (煮物 Japanese stewed dishes).

Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

    Sake

    Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

In this cooking class, we will make traditional Japanese home-cooked dishes!
A key element of Japanese cuisine is dashi (broth) and fermentation.
We aim to prepare simple and easy recipes so that everyone can recreate them at home after returning to their countries.

The planned recipes include Nikujaga (meat and potato stew), Sasami Ume Shiso Maki (chicken tenderloin rolled with pickled plum and shiso), and Miso Soup.
