In our cozy Kyoto kitchen, you’ll prepare a full Japanese home-style meal from scratch. We start with our four staples: fluffy, well-balanced tamagoyaki rolled omelet, tender nimono kabocha simmered pumpkin, comforting miso soup with two kinds of tofu, and fresh horenso ohitashi spinach dressed in light soy. For your main dish, choose one: juicy chicken teriyaki with a glossy glaze, golden-crispy tonkatsu pork cutlet, fragrant pork shogayaki with fresh ginger, delicate miso salmon, or richly flavored yellowtail teriyaki. You’ll cook step-by-step in a relaxed, friendly atmosphere and enjoy the full meal you’ve made together.

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Class Flow:
We begin by welcoming you with tea and introducing the menu for the day. You’ll learn about the core seasonings of Japanese cooking—dashi, soy sauce, mirin, and sake—and how they are used in everyday home meals. Then, aprons on, we move to the kitchen. You’ll prepare our four staple dishes: fluffy, well-balanced tamagoyaki rolled omelet, tender nimono kabocha simmered pumpkin, fresh horenso ohitashi spinach with light soy dressing, and comforting miso soup with two kinds of tofu. For your main, you’ll choose one: chicken teriyaki, tonkatsu, pork shogayaki, miso salmon, or yellowtail teriyaki.

Skills You’ll Learn:
You’ll discover Japanese omotenashi hospitality through careful preparation methods such as beveling the edges of kabocha so they keep their shape, using an otoshibuta drop lid to steam vegetables perfectly, and cooking tamagoyaki over low heat to avoid burning. We’ll show you how to sear meat first, then reduce teriyaki sauce for a rich glaze, and how to use long cooking chopsticks for control and precision. You’ll practice gently chopping tofu, grinding sesame seeds in a traditional suribachi bowl, and see how a few simple staple seasonings can be combined to create an array of authentic flavors.
