    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Cooking Class Information

・Ball sushi (we call Temari sushi) is just like small ball, they are beautiful and easy to eat with one bite size. There are Maiko in Kyoto, it is said that Temari sushi was made for them because they can keep their lipstick beautiful with not open big mouth. I use fresh and safe vvegetables and make beautiul.
・Tempra is crispy and tasty, I also use fresh and safe vegetable ingredients!
・Osumashi is japanese clear type soup and you can taste the kelp soup stock tast most.
・Shiratama is made from rice, they are sticky and tasty.

Hello. I am Aiko. I have been cooking instructor over years. The main thema of my cooking class is japanese soup stock which is called DASHI and vegetables. I am also vegetable sommelier so I use many kinds of vegetables with Dashi in my every cooking class. Dashi is the foundation of Japanese cusine, I would like people from other countries to know about it! My place is just north of World Heritage Himeji Castle, please stop by my place to cook beautiful Japanese cusine with me.
