    Karaage

    Japanese fried chicken, karaage is made by marinating bite-size pieces of chicken in sake, soy sauce, ginger and garlic before coating them generously with potato starch. When fried, the starch turns into an ultra crispy shell encasing a flavorful juicy bite of chicken. Absolutely great with beer.

    Rice

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Niku-jaga、Ganmodoki/Karaage and Ohitasi.
They are delicious Japanese home-cooked dishes.

**Niku-jaga originated Kure during the Meiji period when Japanese naval cooks tried to recreate British beef stew using Japanese ingredients. It has since then become a classic home-cooked comfort dish.

**Ganmodoki is a deep-fried tofu fritter mixed with thinly sliced vegetables.

**Karaage is a Japanese style fried chicken, and is a staple in Japanese cuisine.

**Ohitasi is a light and healthy dish where we blanch green vegetable tossed in soy sauce. Very tasty!

Hi! My name is Rika.
I live in Okutama, very west end of Tokyo.
Our location is in the middle of nature, and my farmhouse is more than 100 years old where silk warm was taken care to make silk.
Our garden is next to the farmhouse, so I harvest vegetables, and cook them for my daily meals.

When I was traveling, I always enjoyed spending time with local people, and tasting their cooking.
So now I want people visiting Japan to experience something special in this mountain village near Tokyo.

It takes about 2hours from central Tokyo, but you can easily make a day trip.
