    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

The reason I decided to start a cooking class was because a Singaporean friend I met 35 years ago would treat me to my home-cooked meals whenever he visited Japan. They always enjoyed them, so I wanted to teach Japanese home cooking to more people from other countries. It also made me want to study English more. The class is about a 20-minute train ride from Mount Yoshino, famous for its cherry blossoms. Shimoichiguchi Station is the nearest station, but I will provide transportation. The rooms were DIYed by my parents at a chopstick factory, and there is a wood-burning stove, creating a relaxing atmosphere. After eating the food you've prepared, you can also experience matcha tea.
My house is a 15-minute train ride from the nearest station to Mount Yoshino, famous for its cherry blossoms.
