A bakery with 20 years of experience as a bread instructor will be holding a workshop on making chewy matcha red bean paste ring bread.
At a bakery and bread-making class in Tokyo, we'll be making matcha red bean paste bread, a popular treat among international visitors. Made in a 13cm ring mold, the matcha red bean paste bread boasts an irresistibly soft and chewy texture. We'll measure the ingredients, mix, knead, and perform the first fermentation. Then, we'll shape the dough, perform a second fermentation, and finally bake it! While it's baking, you can enjoy our signature komatsuna (Japanese mustard spinach) chiffon cake (a hall-of-fame winner in the komatsuna gourmet contest) and coffee, while being soothed by the wonderful aroma of the bread. Finally, you can take home the finished bread and the recipe. If you'd like to request a class on a date not currently listed, please send us a message.
Please visit Kesaran Pasaran, a bakery located on the second floor of the Toki Building, right in front of Funabori Station. A wide variety of breads awaits you.
Let's explain the ingredients for making bread. Mix the ingredients and knead the dough.
The dough is fermented and then shaped. Then, it undergoes a second fermentation.
While the bread is baking, please enjoy our signature komatsuna chiffon cake, which has been inducted into the Hall of Fame at the Komatsuna Gourmet Contest, along with a cup of coffee, and be soothed by the wonderful aroma of the bread.
The shop is filled with a wonderful aroma. You can take home the freshly baked bread and the recipe at the end.
Finally, we take a photo of the finished bread with the staff.
Kumiko
I've been teaching bread making for 20 years, instructing adults and children at a bakery in Edogawa Ward. I'd love for people from other countries to enjoy making and baking Japanese bread with its fluffy and chewy texture. I'll give you the recipe at the end, so please try making it when you return to Japan. We'll be making a 13cm ring-shaped matcha and red bean paste bun.
