Most Soba in cities is pre-made, but here at the foot of Mt. Fuji, we follow the 'Fresh Three' rule: Freshly ground, Freshly kneaded, and Freshly boiled. We use pure spring water filtered through Mt. Fuji's lava for over 80 years. Learn the rhythmic cutting techniques used by masters to create thin, elegant strands in a historic farmhouse setting.

最大の特徴は、富士山の溶岩層で80年以上かけて濾過された「忍野八海」の湧水。雑みのない水がそば粉の香りを最大限に引き出します。
麺棒で薄く伸ばし、リズムよく 包丁で細く切る繊細な手仕事を通じて、日本の伝統美を感じるひとときをお過ごしいただけます。

We are passionate about sharing the authentic food culture of our region with guests from all over the world. Our specialty is 'Houtou' and 'Yoshida Udon', the traditional soul foods of Yamanashi that have been loved by locals for generations. In our spacious and welcoming facility, you won't just eat - you will experience the joy of making these noodles from scratch, from kneading the dough to simmering the rich, flavorful broth. Whether you are looking for a standard cultural experience, a premium Wagyu/Seafood feast, or a fun activity with your family, we have various plans to suit your needs.
