    Karaage

    Japanese fried chicken, karaage is made by marinating bite-size pieces of chicken in sake, soy sauce, ginger and garlic before coating them generously with potato starch. When fried, the starch turns into an ultra crispy shell encasing a flavorful juicy bite of chicken. Absolutely great with beer.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

  • Tsukemono

    Tsukemono

    Japanese preserved vegetables, usually pickled in a salt, brine or a bed of rice bran. They are often served to satisfy the balance with other dishes in sensory, authentic and nutritious consideration. Tsukemono are raw vegetables and think of them as a type of salad with the added benefits of lactic-acid fermentation.

Karaage is one of the most loved dishes in Japanese home cooking. In this class, you will discover how to marinate chicken with soy sauce, ginger, and garlic, and how to fry it to achieve the perfect balance: crispy on the outside and juicy on the inside.

This is not a large commercial class. I teach only one small group per day so you can cook at a relaxed pace, ask questions freely, and truly enjoy the experience.

Hello, I’m Fumie, a Japanese home cooking teacher based in Japan. Whenever I travel abroad, I always join local cooking classes to learn from home cooks and chefs. I truly believe that food connects people beyond language — cooking is a universal way to understand culture and share hearts.

I offer warm, small-group lessons designed for visitors who love Japan and want to recreate authentic Japanese home-style dishes. In my class, you will learn simple and delicious meals such as tonkatsu, oyakodon, udon, sushi rolls, and comforting seasonal dishes. We cook step by step in a relaxed, friendly atmosphere, even for beginners.

You will receive easy-to-follow English recipes so you can recreate the experience at home and share Japanese flavors with your family and friends. I look forward to cooking together.
