Cooking Class Menu

This is not just a cooking class; it's a complete immersion into the local Japanese lifestyle!

Our journey begins at Akashi Station, where we will head to the vibrant "Uontana" local market. With my support, we will buy fresh ingredients together, just like the locals do. After a short ride on a local bus, we will arrive at my 70-year-old traditional Japanese house (renovated into a beautiful cafe).

Before cooking, you will change into a traditional Japanese chef's uniform (Samue). You will learn the very foundation of Washoku: how to make authentic "Dashi" (soup stock) from scratch. Using this Dashi, we will make fluffy Dashimaki Tamago (rolled omelet), traditional Miso soup, and beautiful, delicious Sushi Rolls. As a gluten-free specialty shop owner, I guarantee that all menus are 100% gluten-free!

After cooking, we will move to a traditional Tatami room. You can enjoy your self-made lunch served on authentic, antique Japanese tableware, while looking out at a beautiful Japanese garden. (Don't worry about sitting on the floor—we provide comfortable high chairs and tables!). Finally, enjoy a photo session in the garden with a traditional red umbrella (Nodategasa).

Transportation: The local bus fare from the market to the venue (Approx. 230 JPY) is not included in the price. Please pay this directly on the day.

Personal Shopping: The cost of any personal purchases, snacks, or souvenirs you choose to buy at the local market is not included in the tour fee.

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Would you like to learn how to make gluten-free Japanese dishes that you can easily share with your family and friends back home? Perfect for home parties or potlucks, these recipes are designed to be simple and delicious.

In my workshop, we use the inviting space of a gluten-free cafe—set in a renovated traditional Japanese house—to prepare healthy, approachable meals.

After cooking, we will move to a separate, traditional Japanese-style room to relax and enjoy the meal you’ve prepared. It’s a wonderful opportunity to dine while looking out at a peaceful Japanese garden.

I would be very happy if you could experience both the flavors of Japanese home cooking and the serene atmosphere of this space.
