Experience the ultimate Japanese luxury: Authentic Kobe Beef Sukiyaki in a 70-year-old traditional house!

Finding a 100% Gluten-Free Sukiyaki in Japan is extremely rare because regular soy sauce contains wheat. In this premium class, you will learn the fascinating history of Sukiyaki, discover the different types of Japanese Sake, and learn how to make our special GF "Warishita" (Sukiyaki sauce) entirely from scratch.

Our journey begins at Akashi Station, heading to the vibrant "Uontana" local market. We will buy fresh local vegetables and tofu together. After a short ride on a local bus, we will arrive at my historic Japanese house.

Before cooking, you will change into a traditional Japanese chef's uniform (Samue). In our cafe area, you will learn the history of this famous dish, how to cook perfect Japanese rice, and practice cutting the fresh ingredients.

Once the preparation is done, we will move to a beautiful traditional Tatami room overlooking a Japanese garden. Here, the real fun begins!
You will fire up the pot and cook the Premium Kobe Beef and vegetables right at your table, enjoying the freshly made Sukiyaki hot from the pan, just like locals do. Enjoy it with Japanese Sake or a non-alcoholic beverage of your choice.

Finally, enjoy a photo session in the garden with a traditional red umbrella.

  • Sukiyaki

    Sukiyaki

Sukiyaki is completely different; the food is cooked in a sweet and salty soy sauce based broth and full of bold flavors straight from the pot. Besides the broth, the pot used to cook sukiyaki is also quite different from shabu shabu. Traditionally it is cooked in a cast iron pot while Shabu Shabu is cooked in a Japanese clay pot called donabe (土鍋), and the thinly sliced beef (but slightly thicker than shabu shabu meat) are seared first in the pot before adding the ingredients and broth. Despite having different flavor and cooking utensils, most Sukiyaki ingredients are similar to Shabu Shabu, such as leafy vegetables, tofu, shiitake mushrooms, and so on.

  • Rice

    Rice

Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Sake

    Sake

Japanese popular alcoholic drink must be Sake, or called Nihonshu, made from fermented rice. The foundation of good sake is quality rice, clean water, koji mold and yeast. Premium sake differentiates itself in quality of ingredients and production process, so that flavors ranges light and crisp to richer, fruity notes.

About Host

Hi, I’m Kenichi!
Would you like to learn how to make gluten-free Japanese dishes that you can easily share with your family and friends back home? Perfect for home parties or potlucks, these recipes are designed to be simple and delicious.

In my workshop, we use the inviting space of a gluten-free cafe—set in a renovated traditional Japanese house—to prepare healthy, approachable meals.

After cooking, we will move to a separate, traditional Japanese-style room to relax and enjoy the meal you’ve prepared. It’s a wonderful opportunity to dine while looking out at a peaceful Japanese garden.

I would be very happy if you could experience both the flavors of Japanese home cooking and the serene atmosphere of this space.
I look forward to welcoming you!
