    Rice

    Rice is a staple food in Japan. In all most every family, there is a rice cooker. There is variety of Japanese rice brands such as Koshihikari and Hitomebore.

  • Miso Soup

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

    Green Tea

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Cooking Class Information

Simmered fish is a traditional method to cook fish in Japan.
However, modern Japanese people are eating more meat and less fish these days.
As a result, not many homes eat fish dishes cooked with a Japanese dashi(Japanese soup stock) even though they were seen at any home in the past.
I will offer that kind of traditional Japanese fish dishes. I offer two kinds of Simmered fish cooked with 4 types of soup stocks. I also offer a takikomi rice cooked with fish soup stock and boiled spinach seasoned with soy sauce and matcha pudding.
We carefully select local foods and try not to use chemical seasoning as much as possible.
I have already experienced to offer dishes for Pescatrian.
Classes can be in English or Chinese and the guests will receive a free recipe in English or Chinese.

I have worked as a salesperson in a trading company and a teacher at a private school for about 10 years. In 2014, I started cooking by myself for the health since I suffered from an intractable disease because of stress from work and bad eating habits. Since then, I’ve continued cooking myself for healthy diet habits. I learned about establishing a foreign cooking class from the thought that "I would like to work with my favorite dishes and by using English and Chinese and my favorite cooking." because I’m good at English and Chinese, I opened the Japanese Simmered Fish Cooking Class on only weekends in October 2017.
I’m planning to open a cooking class for foreigners that uses local food in Oita prefecture for the future.
