・Miso Soup
We’ll make a traditional Japanese miso soup using homemade dashi, tofu, and my homemade miso.
・Sesame-Dressed Vegetables
We’ll prepare a simple Japanese side dish using seasonal vegetables tossed with fragrant ground sesame seeds.

We’ll prepare sushi rice and fillings for hand-rolled sushi. Once the rice is cooked, we’ll transfer it to a traditional wooden sushi tub, pour over sushi vinegar, and mix it using a cutting motion.
For the fillings, we’ll make Japanese rolled omelet (tamagoyaki) and teriyaki chicken.
We’ll also make miso soup from scratch. We’ll prepare dashi, add the ingredients, and dissolve miso into the broth.
For the sesame-dressed vegetables, we’ll roast sesame seeds and grind them in a traditional Japanese mortar and pestle. We’ll then mix the freshly ground sesame with seasonings and toss it with boiled seasonal vegetables.
Once everything is ready, we’ll sit down and enjoy the meal together. Hand-rolled sushi is a meal that everyone completes at the table by choosing their own favorite fillings. Try different combinations and discover your own favorite!

I love traveling and discovering local food wherever I go. At home, I enjoy making traditional fermented foods such as miso and umeboshi from scratch every year. I’m also a licensed medical doctor, so I care about making food that is not only delicious but also balanced and nourishing.
