Japanese-Style Strawberry Shortcake Cooking Class
Learn how to make one of Japan’s most beloved desserts: Japanese-style strawberry shortcake!

This is a small, hands-on cooking class held at my home in beautiful Kita-Kamakura. Unlike a typical tourist cooking experience, you’ll join a regular Japanese-style cooking class together with local Japanese participants and experience a more authentic side of everyday Japanese food culture.

Japanese strawberry shortcake is different from many Western-style cakes. It features a light and fluffy sponge cake, softly whipped cream, and fresh strawberries. We’ll make the cake from scratch and learn the techniques needed to create its delicate texture and beautiful appearance.

You’ll work alongside the instructor and other participants, making your own cake while enjoying a relaxed and friendly atmosphere. Along the way, I’ll explain some of the traditions and culture behind Japanese cakes and sweets.

At the end of the class, we’ll enjoy the freshly made cake together with tea or coffee.

Cooking Class Information

What We’ll Do
Prepare the ingredients

Measure the ingredients and prepare the strawberries.
Learn about the ingredients commonly used in Japanese cakes.
Make the sponge cake

Learn how to whip the eggs to create a light and fluffy texture.
Carefully fold in the flour and other ingredients.
Bake the sponge cake until it is soft and evenly golden.
Prepare the whipped cream

Learn how to whip fresh cream to the right consistency.
Discover how the texture of the cream affects the finished cake.
Prepare the strawberries

Wash and prepare the fresh strawberries.
Cut them into pieces for the filling and decoration.
Assemble the cake

Slice the sponge cake into layers.
Add whipped cream and strawberries between the layers.
Cover the cake with cream and decorate it with strawberries.
Enjoy your homemade cake

Take a moment to admire your finished cake.
Enjoy a slice together with tea or coffee and chat with the other participants.
About the Class
This class takes place in my private home in Kita-Kamakura, surrounded by the peaceful atmosphere of the area.

The class is conducted together with Japanese participants, giving you an opportunity to meet local people and experience a casual Japanese cooking class rather than a class designed only for tourists.

Please note: As this is a private home-based class, participation is limited to women and guests accompanied by a woman.

I love cooking and baking, and I have been making everyday Japanese meals and homemade sweets for many years.

I also run a small home baking class called Kita-Kamakura Small Baking Class.

If you visit Japan, international guests are welcome to join some of my baking classes together with Japanese participants. You can enjoy making homemade Japanese sweets in a cozy home kitchen and experience a little part of everyday life in Japan.
