Welcome to my kitchen in Niigata!
I am a Nationally Registered Dietitian with over 20 years of experience. In this class, you will learn how to make authentic, healthy, and delicious Japanese dishes (Washoku) using traditional fermented ingredients like Koji, Miso, and Shio-Koji.

1. Welcome Drink & Introduction: Enjoy local Japanese tea while I introduce the magical world of "Dashi" (Japanese broth) and "Koji" (fermentation).
2. Cooking Experience: Step-by-step, we will make rich Miso soup from scratch using Dashi, hand-roll Onigiri (rice balls), and cook seasonal side dishes.
3. Tasting Time: Enjoy your homemade Washoku meal together in a cozy, welcoming atmosphere!

My name is Chie, a Nationally Registered Dietitian with over 20 years of experience in nutrition and traditional Japanese cuisine.
