Salted Butter Melon Bread (Shio Butter Melon Pan) with Natural Yeast
+Simple Lunch & dessert Making.
Discover a delicious twist on Japanese melon pan: soft bread with a crisp, sweet cookie crust, a buttery center, and a touch of salt.
We use homemade natural yeast, which requires a longer fermentation time. To fit the experience into one class, you’ll start with bread dough that has already completed its first fermentation, then shape it and add the cookie crust.
While your bread rises, we’ll make a simple lunch and dessert together.
For the tasting, you’ll enjoy salted butter melon bread that I make and bake during the class as part of my demonstration, alongside the lunch and dessert we prepare together.
Experience bread shaping, learn about natural yeast, and enjoy making and tasting a variety of delicious treats!
Join me at Lotus for a hands-on salted butter melon bread experience using homemade natural yeast. Beginners are welcome, and I’ll guide you through each step.
Natural yeast dough takes time to ferment, so I’ll prepare the dough in advance and complete its first fermentation before you arrive.
You’ll divide and shape the bread dough, add the butter filling, and cover it with cookie dough to create the sweet and salty combination of our salted butter melon bread.
While your bread undergoes its final rise, we’ll prepare a simple lunch and dessert together. You can enjoy learning and cooking throughout the fermentation time.
For our tasting, I’ll serve salted butter melon bread that I have baked in advance, alongside the lunch and dessert we make together.
We’ll also bake the bread you shape during the class, so you can see your creations come out of the oven!
Rumi
Hello! I’m Rumi, the founder of Lotus, a baking and sweets studio in Shin-Urayasu, Chiba, near Tokyo.
I love baking bread with homemade natural yeast, making sweets, and exploring creative cake decorations. I’m especially interested in expressing the quiet beauty of Japanese gardens through edible designs.
At Lotus, I want everyone to experience the joy of saying, “I made this!” Beginners are warmly welcome. Together, we can enjoy creating something delicious with our own hands.
I became a host to connect with travelers through food and share my love of baking and Japanese culture. My studio is a warm, welcoming place to create, taste, and enjoy conversation.
I hope your time at Lotus becomes a happy, delicious memory of Japan, and I look forward to welcoming you to my studio!
