  • Tempura

Tempura (天ぷら) is a classical Portuguese dish brought to and popularized by Japan, consisting of seafood or vegetables that have been battered and deep fried. Tempura is a typical home-style cooking in Japan. It is often referred to as a representative dish to Japan. Although there are various theories, it is said that Tokugawa Ieyasu, the general of the Edo period, liked tempura so much that he allegedly died from eating too much.

  • Udon

Udon (うどん) is a type of thick wheat flour noodle. It is similar to Italian pasta, but much thicker. It has been eaten all over Japan as an easy-to-eat popular meal, and a substitute meal for rice dishes. Udon is often served hot as a noodle soup in its simplest form, as "kake udon", in a mildly flavoured broth called kakejiru, which is made of dashi, soy sauce, and mirin. The flavor of broth and topping vary from region to region.

  • Green Tea

    Green Tea

The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

One of the highlights of my trip was attending Sayaka’s class and seeing her again! I attended her tonkatsu, omu-rice and warabi mochi class last year. As I had an amazing experience last time so I decided to attend her class again. Sayaka is knowledgable. Her instructions are clear and recipes are easy to follow. Thank you for sharing her ideas on how to make a nice food presentation. That was amazing. I cannot wait to try to make these dishes back home.

We had attended a few cooking classes in Fukuoka and back home in Singapore. Ms. Sayaka was the excellent host by far. We signed up for 2 dishes with an extra dish thrown in upon our request for free. It was a joyful and enriching experience learning from her. She also offered us with so much tips on Japanese food ingredients, sauces and even on table setting. Her generosity and warm hospitality touched us deeply. Keep it up, Ms. Sayaka.
