Ramen (Soup with natural ingredients, boiled pork or chicken , marinated eggs) and gyoza dumplings
We will make ramen and gyoza together at my house.
I live in a small seaside town called Oiso near Odawara and Hakone in Kanagawa prefecture. I will pick you up at Ninomiya station on the JR Tokaido line. It takes only 5 minutes from Ninomiya station to my house. When you arrive at my house, I will show you my kitchen and we will move on to cooking. First of all, we will make soup for the ramen with all natural ingredients. Soup is the most important ingredient in ramen. I will explain the Japanese ingredients for the soup and also tell you how to use ingredients available in your own country. We will make toppings, "ajitama" which means half-boiled-eggs marinated in soy sauce and "chaashu" which means pork boiled in soy sauce. (If you don't eat pork, we can use chicken instead of pork.) While we wait for the soup to be done, we will make gyoza. Timing is very important for this recipe. Ramen should be very hot when you eat it, and the gyoza should be ready at the same time. Afterwards, we will eat the food together.

My husband is British and a lot of his family members are vegetarian or vegan, so I have been making vegetarian and vegan Japanese cuisine for them for many years and they love it. I know there are only a few vegetarian and vegan options in Japan, but I would like you to enjoy Japanese food culture.

★★★★★Manami was a great host! I decided to celebrate my birthday with a cooking class with Manami - learning how to make ramen and gyoza's! The lesson was absolutely phenomenal, she was so kind and her english was great. She walked us through every step and explained little details about each and gave us tips about cooking. Her home is beautiful and it really made the experience felt true to japanese culture. Manami took pictures of us the whole time and let us customize our food accordingly, e.g. I didn't eat seafood, so she adjusted the recipe for me. Throughout the whole process, she had fun with us, joked with us and truly made us feel like we were able to immerse in true japanese culture, not just the touristy things. The final product was AMAZING, the flavors were incredible. She even put candles in a little cake for my birthday and sung happy birthday to me, which was so thoughtful!! Her house is a little far from the city, and it might be tempting to book a commercial cooking class in the city thats closer, but trust me, it is ABSOLUTELY worth it. Not only is it cheaper, but the experience is so much more wholesome and genuine and it gets to be a private lesson. Manami truly made my birthday trip one of the best ones I've ever had, and I couldnt thank her enough for the kindness she showed and the great experience and food she prepared for us.
