“Farmer side dish” is a unique dish that can be enjoyed with the whole taste of vegetables. The type of vegetables changes depending on the season. The basic seasoning is made using homemade soy sauce and miso.

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

My husband and I run a guest house in Oimachi, Ena City, Gifu Prefecture. I started this air kitchen for dinner at the guesthouse. We make homemade miso and soy sauce using rice, wheat and soybeans. Seasonal ingredients such as fruits, wild plants and vegetables are also processed into preserved foods. Please experience the fun of handmade. We live with 2 dogs and 5 cats. Please refrain from cat allergies and those who do not like cats and dogs.
