* Organic home-made MISO
Miso is one of the soybean foods that is indispensable for Japanese. It is made from steamed and mashed soybeans mixed with salt and koji. Koji is a substance such as wheat, barley, rice malt that helps the soybeans to ferment. The mixture is left until it ripens. This can take from several months. So, you can bring your home-made miso, and will taste after you back home. In this workshop, I will let you know how to make miso, what is koji, and how fermented food is good for your heath, etc. After the workshop, you can enjoy my home-made miso, and other fermented food.
In this workshop, we make home-made “Miso” together.
Miso is one of the soybean foods and is popular as a fermented food. We will mix the steamed soybean which already prepared beforehand (it’s because it takes for 4 hours to ready), salt, and Koji (malted) that helps the soybeans to ferment. Please do not worry, that all ingredients are organic.
You can select from three type of Koji - wheat, white rice, and brown rice. The taste will be different depends on those koji you selected.
The mixture is left until it ripens. This can take several months. So, in this workshop, I’m pleased you to enjoy my home-made miso as "Miso Soup”, and other dishes using miso. Also, you can enjoy another fermented food, " Enzyme brown rice” made from salt and red beans.
Also you can enjoy the Bento box which made by bamboo skin, and that filled with a healthy food.

Here is the 3 type of Koji.
* White rice: this is most popular koi for miso. this is something sweet rather than other Kojis.
* Wheat: the taste with his koji is more lighter than rice.
* rown rice: the taste with this koji rich in flavor.
