・Dandan Ramen using only plant-based ingredients(Vegan Dandan Ramen)
Japanese Dandan Ramen are typically thick sesame-based soup. My sesame-based soup made from kombu kelp, shiitake mushrooms and sautéed vegetables. You can feel the rich flavor, and you can't believe it's a Dandan Ramen made from only plant-based ingredients. You can put something you like on your Dandan Ramen such as meat miso(using soy meat) and vegetables.
・Japanese Gyoza using only plant-based ingredients(Vegan Gyoza)
My gyoza is made by wrapping the gyoza fillings made from tofu, cabbage, shiitake mushrooms, and quinua and steaming.
・Gyoza sauce
You can make Gyoza sauce with miso that goes well with gyoza.

  • Ramen

    Ramen

Ramen is a noodle soup dish and perhaps one of the most popular Japanese dishes. There are many flavours of ramen, such as Shoyu (soy sauce) ramen, Miso ramen, Tonkotsu (pork bone) ramen and so on. Common toppings are Chashu (braised pork), Negi (green onion) and Nori (dried seaweed).

  • Gyoza

    Gyoza

Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

Hello everyone. I'm Kayo. The mother of three kids. I enjoy making meals and lunch boxes for them everyday. I try to make Japanese cuisine for their health and growth. I love making and eating Japanese cuisine(Washoku) and sweet(Wagashi). I experienced living abroad in 2018, and I learned about different food styles such as vegan, vegetarian and halal. I was surprised that the food diversity is very natural overseas. After returning to Japan, I received a lecture from BentoYa Cooking (Japanese cooking association for vegan and vegetarian), and certified as an instructor. I want to pass on Japanese cuisine that can accommodate the food diversity. My cooking class is held at home. Children are also welcome. there's a Japanese-style room, so if you wish, you can dine in Japanese style. Let's enjoy cooking together:)

Great class! The gyoza and ramen turned out great. You will do the portions, mixing of ingredients, and packing the gyoza. and the host will do the cooking over the fire. It was very tasty! You will eat a lot of soy because there don’t seem to be many non-animal protein alternatives in Japan.

We enjoy this tokyo cooking class with her. That I want to come back a second time is a testament to how awesome the last vacation was. I keep having a bit of nostalgia over the whole cultural exchange program. Traditional food and dining are amazing.
