    Gyoza

    Gyoza is a dumpling using wrapping thing dough to hold the inner ingredients. Most commonly, minced pork, cabbage, Garlic and Leek. The origin of Gyoza is from China but it has evolved uniquely in Japan and now quite different from the Chinese one.

    Onigiri is a Japanese comfort food made from steamed rice formed into the typical triangular, ball, or cylinder shapes and usually wrapped with nori(dried seaweed). Stuffed with a a variety of fillings and flavors, these rice balls make an ideal quick snack and are a fun alternative to sandwitches for lunch.

    Miso Soup

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

Cooking Class Information

In this cooking class, we cook Kashiwa-meshi, which is one of the Fukuoka's specialities. There are several ways of cooking Kashiwa-meshi, but we would cook the ingredients and rice separately. First cook the chicken and burdock root with soysource and Japanese Sake, drain and cook the rice, then finally mix them altogether. You can also try making 'onigiri' with them!

I also show you how to make Japanese gyoza.
We will use the ready made gyoza dumpling wrappers, which is common in Japanese family.
We prepare the ingredients by mixing meat, vegetables and seasonings, and then wrap them with wrappers. You can learn how to wrap ingredients properly which is very fun part of the cooking. (When I was a child, I used to enjoy wrapping while talking with my mother.)
Then we cook them with the electric hot plate, which is one of the common cooking tool for us.

We also cook the miso soup with Shiitake mashroom dashi and chopped Tofu as well.

Ingredients can be replaced for vegitarians if requested.

Hi, I'm Yoko! I have two kids and taught how to make Charactor Bento for people from oversea for over 4 years. I also work as an English teacher for kids as well as a crochet instructor.

I sometimes take students from oversea as a hostfamily since I've stayed at several host families in UK and Australia when I was young. It was very good experience in my life to feel the real life at local's home in the different countries.

Through my class, I would like you to enjoy not only learning homemade cooking but also seeing usual lifestyle at local's home in Japan.
