Teriyaki chicken is one of the most popular Japanese dishes in the world.
Japanese teriyaki is characteristic in its teriyaki sauce. It is very rich in flavor.

Rolled egg omelet
Rolled egg omelet is called tamago-
yaki. It is a classic popular dish.
You will cook with chopstics and rectangular pan. It is a nice exp-
erience.

Vegetable with sesame miso sauce
This sesame sauce recipe is unique.
You can enjoy the rich flavor of the sauce. It is a nice healthy dish.

Miso shiru is a popular soup served with Japanese meals. Some typical
ingredients are tofu and wakame.

    Miso soup is a traditional Japanese soup. It's base is "dashi" (Japanese fish stock) and Miso paste. Common added ingredients are Tofu, Green onion and deep‐fried tofu but differs by personal preference. The type of miso is different from region. In western and Easter Japan white miso is mostly used.

    The astringent constituent in Japanese tea is a type of polyphenol called catechin. Japan has done a great deal with the humble tea leaf. For example some benefits of the catechin in the tea leaf can lower cholesterol in some cases. Roasted over charcoal at a high temperature and grown under shade for at least 20 days are one of the examples. The most popular Japanese tea might be ryokucha. Depending on the timing of picking the leaves, the grade, the price can be noticeably different.

Cooking Class Information

In this cooking class, we can cook popular Japanese dishes together.
・Teriyaki chicken
First, cut the chicken with the butterfly cutting technique. Make
the thickness of the chicken even.
Second, coat the chicken with potato starch. If the chicken is coated, we
will pat the excess oil off with our hands.
Third, put some oil in the pan and set to midium heat. Grill the chic-
en skin side down for a few minutes
until brown the skin side.
Then, turn it over and grill.
Finally, pour the sauce over the chi-ken. Thicken the sauce until it has
a nice and glazed texture.

・ Rolled egg omelet
First, put all the ingredients in a bowl and beat them well.
Second, heat the pan over a midium heat, put some oil on a square pan.
Third, pour a quarter amount of the mixture into the pan. Spread it quickly then roll the egg from the back of the pan towards you.
Then, add oil to the pan and pour in another quarter of the mixture. Make sure to lift the previously rolled omelet to spread the mixture underneath it.
Lastly, repeat the same procedure to create layers in the rolled egg again
and again.

・ Vegetables with sesame miso sauce
First of all, add some solt and spinach into boiling water and blanch them for 60 seconds.
Next, put them in cold water and squeeze out.
Then, cut into small sections and the ingredients of the sauce into a bowl and mix well.
Finally, mix the vegetables and the
sauce before consuming.

・ Miso soup
First of all, put dashi in a pot and bring it to a bowl. Next, add the miso.
Then, warm on low heat and then add the tofu and wakame. ☆ Do not boil after adding the miso or tofu.
