I live in a small seaside town called Oiso near Odawara in Kanagawa prefecture. You can drop by on the way to Hakone or back to Tokyo from Hakone.
I will pick you up at Ninomiya station on the JR Tokaido line. It takes only 5 minutes from Ninomiya station to my house by car. When you arrive at my house, I will explain you about all ingredients and process. First of all, we will make soup broth for ramen with all natural ingredients. Soup is the most important ingredient in ramen. Also we will make the ramen toppings "ajitama" ,which means half-boiled-eggs marinated in soy sauce, and "chaashu" which menas boiled pork. While we wait for the soup broth and the pork to be done, we will make noodles and gyoza wrappers from scrach. You can learn some techniques to make noodles and gyoza skin from flour. Then we will make gyoza fillings and make gyoza dumprings with the hand made wrappers. At last we will make ramen soup with the soup broth and boil noodles. You can choose a soup from 3 kinds of flavour; soy sauce, miso butter or sesame. Timing is very important for this recipe. Ramen should be very hot when you eat it, and the gyoza should be ready at the same time. Afterwards, we will eat the food together.
Hi! I’m Manami. I love cooking and meeting people. My husband is British and a lot of his family members are vegetarian or vegan, so I have been making vegetarian and vegan Japanese cuisine for them for many years and they love it. I know there are only a few vegetarian and vegan options in Japan, but I would like you to enjoy Japanese food culture.
