You can taste freshly soba that you made by your hand. Soba is a noodle made from 80 % of buckwheat flour and 20% of binding agent and water.That’s simple and healthy.
- Making soba
In this cooking class, we can cook soba(buckwheat)toghther.Knead,flatten,cut, everything by your hand.Dip chilled soba into the soup, and taste your handmade soba.
Let’s meet at Uzen-Kanezawa station which is 20 minutes away from Yamagata station.
We walk to my house while looking at view of countryside for 15 minutes.
We wash hands after arrive at home, then start making soba. We will teach you how to knead the dough, roll out it, then cut it.
Let’s eat handmade soba! We prepare spring onion which my grandparent make in the their field,wasabi,seaweed,cayenne and dipping sauce to enjoy soba.

When I travel, I like eating local food, and cominucate with local people.When I received a warm hospitality from local people,that travel became unforgetable memory in my life.
I grew up seeing my grandfather (鈴木光勇 kouyu suzuki) making soba at home.He started making handmade soba over 10 years ago, and every new year eve definitely make handmade soba.
I would like to share our local food culture.That’s why we decided to start this project.
